Buying beef

In Minnesota, when you buy beef directly from the farmer, you are actually buying a live animal (or at least a portion of one). Don’t worry, we assist with getting the animal processed on your behalf!
We support the buyer’s right to see their animal before harvest and we also welcome prearranged farm visits.

We talk about buying a “quarter beef” but you are really getting half of a half. This means that you will get to choose from the variety of cuts available.
Of course, you are always welcome to buy more - 1/2, 3/4, and whole animal options are available.

On the scheduled day, the butcher comes to the farm to dispatch the animal and transport the carcass to the meat locker.
The hanging-weight of the carcass is recorded when it arrives at the locker.
The locker will work with you to choose your cuts and schedule your meat pick-up.

There are two payments involved - one to us for the animal and one to the meat locker for the butchering & processing.
The cost of the beef and the processing fee are based on the hanging-weight.
The locker also charges a modest flat fee for the butchering and processing.

Live weight is the weight of the living animal.
Hanging weight is the weight of the carcass after dispatch and removal of hide, head, organs, etc. (typically around 55% of live weight).
Packaged weight is the weight of the finished beef the customer receives after aging, cutting, trimming, and deboning.
